This flavourful umami rich shaded green tea is called Karigane in Japanese which means Cry of the Wild Goose, a name given to the tea because of the pale stems amongst the leaves evoke driftwood in water that wild geese look out for when they need a rest during their long migratory flights. Easier to make than many gyokuro teas, this tea is forgiving and enjoyable even when made with warmer water.
